Vegan Southwestern Stew Recipe

This next vegan recipe is both healthy and delicious. It’s under 300 calories and is sure to be enjoyed by both vegans and non-vegans alike.

Ingredients

  • 1 tbsp olive oil
  • 1 medium sized onion chopped
  • 2 14.5 oz. cans of tomatoes with green chilis
  • 1 15 oz. can of hominy rinsed and drained
  • 1 15 oz. can of red kidney beans rinsed and drained
  • 1 medium zucchini cut lengthwise
  • 1 tsp cumin
  • ┬╝ cup of chopped cilantro

Directions

Get a large pot add oil and heat over a medium high heat. Add in the onion, cook until lightly brown. Stir in tomatoes, hominy, beans, zucchini, and cumin. Lightly season to taste with salt and pepper. Bring pot to a boil, cover it, reduce heat to medium low temperature. Cook for 10-15 minutes or until zucchini is tender. Lastly stir in the cilantro.
