Peanut Noodle Salad Recipe

When people think vegan, they probably think to themselves: no meat, so what is left to eat? The truth is there is plenty to dine on on the vegan menu. There are many great vegan recipes out there and today I’m sharing one of them with you.


  • 1 pack of lo mein noodles
  • ⅓ cup peanut butter
  • ¼ cup soy sauce
  • ¼ cup of orange juice
  • ¼ tsp of red pepper ground
  • 1 red bell pepper cut into strips
  • 6 green onions sliced
  • ½ cup of dry roasted peanuts


Break noodles into thirds. Cook as instructed on package. Rinse with cool water and drain. Mix peanut butter, soy sauce, orange juice, and red pepper until mixture is smooth. Take a large bowl toss in noodles add peanut butter mix and put the remaining ingredients.
